Ingredients
- 1 1/2 cups Grated red kumara
- 1/4 cup Grated tasty cheese optional
- 1 Egg
- Salt and Pepper to taste
- Coconut oil for frying, be generous
Instructions
- Combine ingredients and pan fry in small fritter sized amounts for around 2 mins each side. Take care not to burn. These are SO YUMMY!
Recipe Notes
These can also be used as a burger bun, bread
alternative and are great for kids snacks!
You can use other types of kumara or sweet potato
however the red offers the most consistent results.
Golden kumara is next best. Orange kumara is wetter
so may require adding a small amount of almond flour
to help bind.
